I have a 2000 Z71 Chevy Extended Cab. How small of a sub box can I use for a JL Audio 10" sub? I want to put it under the rear seat.

Welcome to CK!

Most of the JL 10's will do fine in 0.65 cf sealed. (W1,3 and 6)

The W7 series is another ballgame. Here, 1.25 is recommended for sealed.

If you wanted more low end bass, porting is the better option and we'd need to know the specific JL model number you have.

Here's the specs for that sub:

Since your using an under seat install, the "H, W & D" numbers will be adjusted to fit the space you have. The trick will be the Height factor as this sub 5.75" deep + wood thickness.

In short, measure carefully and think creatively as you plan.
