What size fuse and gauge wire would I use between my alt (MAXX 200 amp).

A 200 amp ANL fuse would be great. You will also need an ANL type fuse holder as well. (Typically 1/0 gage wire)

I have a extra 250 ANl layin around. would it work ok.

The fuse rating is based on wire gage used and the anticipated MAX current draw of a given circuit. If you do use the Maxx 200 ALT, I'd feel safer using a 200A fuse to protect the investment.
A 1/0 gage wire is able to handle about 300 A's of current. If using a slammer gage wire here, use a fuse that will protect your wires from fire.
