im getting 2 kickers rated at 600 RMS apiece and i was wondering if i bought an amp with more power than needed if it would blow my speakers

Power to any sub, depends not only on the sub makers rating, but the enclosure used as well. In compact box designs, we can take them up a few extra dB and still be OK. (30-50% more power can be good for a sub)
In a larger sealed or vented box, the sub will need less power to reach max excursion. After that point, sub damage is possible and easily attained at well under rated watts.

If you get a pair of these and want to really make them pump to full capacity, looking at a solid Class D amp that can pump out a true 1200 watts RMS @ 2 ohms. A SX-1250.1 is a very good match for these.
The box design will also have an impact on your bass. What style of bass do you like?
1. Tight, good thump and very fast response
2. A bit more low end thump and a few more dB of SPL
3. Loads of boom and enough bump to shake your car to pieces
Depending on your answer and space in the truck, #2 is a good blend of SPL, size and good low thumps too
